BBQ pulled pork & Kale slaw burgers
Normally vegan pulled pork situations are made with jackfruit, but these guys are made wth mushrooms and artichokes! so if you are not a fan of jackfruit this is your gig!
So full of flavour by creating your own BBQ sauce and with a tangy coleslaw made with kale!
So juicy, SO GOOD!


Ingredients:
Pulled pork
5 cup diced mushrooms
1 cup marinated artichokes, chopped
1 onion, sliced
2 garlic cloves, diced
2 tbsp grapeseed oil (or olive oil)
2 tbsp tamari (or soy sauce)
2 tbsp tomato paste
1 tbsp smoke paprika
1 tsp chili flakes
1 tbsp apple cider vinegar
1/4 cup brown sugar
Salt & pepper to taste
1 tsp smoke liquid (optional but highly recommended)
Coleslaw
3 cup chopped kale
1 carrot, shredded
1 cup sliced red cabbage
1 tbsp lime juice
1 tbsp vegan mayo
1 tbsp apple cider vinegar
1 tbsp dijon mustard
salt & pepper to taste
Burgers
4 buns
2 pickles, thinly sliced
Vegan bbq sauce (optional)
Instructions:
Heat a cast iron skillet or pan into medium, add oil, once hot add sliced onions and cook for a few minutes
Once onions are nice and brown add chopped mushrooms and garlic, sauté for a few minutes till mushrooms start releasing their liquids
Add chopped artichokes and cook for another 5min
Add tamari, tomato paste, smoked paprika, chili flakes, apple cider vinegar, brown sugar, liquid smoke, salt and pepper, stir to make sure everything is covered and let it cook for another 10min
Don't stir too much, you want to create a nice caramelised/roasted colour, so leave it alone and go ahead a create your slaw.
In a large bowl mix all the ingredients, taste and adjust flavours if needed
Taste your 'pork' and adjust flavours if needed, at this point add BBQ sauce if you decide to go for it.
Assemble your burgers, bun, pork, slaw, pickles, bun. Enjoy!
