Peanut Marinated Tempeh
Look, tempeh is not the most good looking thing by itself and the first time I tried i was not a fan, but the trick is the same with the tofu, you just gotta learn how to marinate it and cook it! This recipe is one of those goodies! its a no brainer, super simple and delicious.
Just give it a try to the poor thing! I promise you will not regret!




Ingredients:
300gr tempeh
Marinade
1/3 cup peanut butter
2 tbsp tamari (or soy sauce)
1 tbsp sesame oil
1 tbsp rice vinegar
1 tsp chili flakes
Instructions:
Place all the marinade ingredients in a bowl and whisk to combine, taste and adjust flavours if needed
Cut tempeh in small bites, I like to cut in 3 rows lengthwise and then small triangles (like in picture above)
Place tempeh pieces in the bowl and mix to make sure is well covered in the marinade
Transfer to a container, cover and slide in the fridge, let it marinate for at least 4 hours, but I highly recommend to leave it overnight
Transfer tempeh to a baking sheet and place on your preheated oven (200c) for around 15-20min or till brown
Serve with rice and my easy peanut sauce, enjoy!
